Ingredients:
- 10 oz box of couscous
- 1/2 cup slivered almonds
- 1 cup sliced mushrooms
- 1/4 cups sun-dried tomatoes, finely chopped
- 1 tsbp ground cumin
- salt and pepper
- 1/4 cup plus 2 tbsp extra-virgin olive oil
- 4 skinless, boneless chicken breast tenders
Instructions:
- Preheat oven to 375°F.
- In a large bowl, combine all but 2 tbsp of olive oil and the chicken. Mix well.
- In the bottom of a 9″x13″ pan. drizzle 1 tbsp of the oil.
- Salt and pepper the chicken and place in the bottom of the pan; drizzle with remaining olive oil.
- Cover chicken and bottom of the pan with the couscous mixture.
- Pour 2 1/2 cups water around the chicken.
- Bake 30 minutes or until chicken is cooked through.
