Serves 4-8.
Ingredients:
- 2/3 c. quinoa, raw
- 1/4 c lime juice
- 1 1/2 cups chicken broth
- 4 boneless, skinless chicken breasts, cut in half
- 2 cloves garlic, minced
- 1/2 tsp thyme, dried
- 1/4 tsp black pepper
- 2 tbsp oil
Instructions:
- Place everything in a medium-sized crockpot in the order listed.
- Cook on high 3 hours.
