Summer Chicken Stew

Serves 6.

Ingredients:

  • 1-1/4 lb. skinless boneless chicken breast, cubed
  • 3-4 cups low-fat chicken broth
  • 2/3 cup pearl barley
  • 1/3 cup quinoa
  • 3 cups fresh mixed summer vegetables
  • 1 cup corn
  • 15oz canned diced tomatoes with chiles
  • Italian seasonings to taste

Instructions:

  1. Put all ingredients in a slowcooker.
  2. Heat on low for 3 hours; stir.
  3. Heat on high for 2 hours.
  4. Serve.

Cook’s Tip
To make things easy and save time, grab a couple of small bags of pre-chopped vegetables from your groceries produce section. (I purchased two 12oz Primevera Blends.

Variation ideas
Add a can or two of lima, butter, or pinto beans for a little more texture.
