Serves 1 – 2.
Ingredients:
- 1 apple, cored and diced (red or green depending on your preference)
- 1/2 cup seedless grapes, halved (red or green depending on your preference)
- 1 tbsp walnuts, chopped
- 2 tbsp fat-free feta crumbles or soy “Feta” crumbles
- 1/3 cup broccoli slaw
- 3 – 4 cups mixed greens
- 2 tbsp fat-free raspberry vinegraitte
Instructions:
- Put everything except the vinegraitte in a large bowl; toss until well mixed.
- Top with vinegraitte.
Variations:
Use 1 tbsp sunflower seeds instead of the walnuts.
