Serves 4.
Ingredients:
- 2 large leeks, white parts only, finely chopped
- 2 cups shitake mushrooms, diced
- 1 cup carrots, diced
- 3 cups vegetable broth
- 1 cup uncooked brown wild rice
Instructions:
- Put all ingredients in a medium-sized slow cooker; cover and cook on low for 6 hours.
Suggested Variation
For something a little more soupy, add another cup or two of broth.
