Mushroom & Wild Rice Mush

Serves 4.

Ingredients:

  • 2 large leeks, white parts only, finely chopped
  • 2 cups shitake mushrooms, diced
  • 1 cup carrots, diced
  • 3 cups vegetable broth
  • 1 cup uncooked brown wild rice

Instructions:

  1. Put all ingredients in a medium-sized slow cooker; cover and cook on low for 6 hours.

Suggested Variation
For something a little more soupy, add another cup or two of broth.
