Berry Panna Cotta

Serves 8.

Ingredients:

  • 32 oz plain nonfat yogurt
  • 2 small boxes of a berry-flavored sugar-free fat-free Jell-O (ie. strawberry, raspberry, cranberry)
  • 1 cup berries
  • non-fat Cool Whip (optional)

Instructions:

  1. Mix yogurt and dry Jell-O mix in a microwaveable bowl.
  2. Microwave on high for 1.5 minutes, then stir and microwave for another minute or until the Jell-O is dissolved).
  3. Pour mixture into a 9″ pie pan sprayed with cooking spray.
  4. Refridgerator for 3 hours or until set, then unmold onto a serving plate.
  5. Garnish with berries and Cool Whip before serving.

Variation
If you skip the step of unmolding and instead garnish while it’s still in the pie dish, you have just as tasty a treat in pie form.
