Spiced Roasted Chickpeas

Ingredients:

  • cooking spray
  • 16 oz chickpeas, drained and rinsed
  • 1/2 tsp chili pepper

Instructions:

  1. Preheat oven to 350°F. Lightly coat a rimmed baking sheet with cooking spray.
  2. Mix seasonings in a small bowl.
  3. Toss chickpeas in seasoning mix.
  4. Spread chickpeas on baking sheet.
  5. Roast chickpeas on bottom rack of oven, turning every 15 minutes, until brown and crunchy, about 45 - 50 minutes.
  6. Cool before serving.

Variations
Instead of chili powder, use 1/4 tsp Slenda and 1/4 tsp cinnamon.

Or use whatever spices suit your fancy
