Southwestern Pasta Casserole

  • Ingredients
  • 12oz whole wheat penne, uncooked
  • 15oz canned tomato sauce
  • 8oz canned tomato paste
  • 15oz Ro-Tel Diced Tomatoes with Chiles
  • 15oz Diced Tomatoes
  • 15oz canned Black Beans, drained and rinsed
  • 1 cup frozen corn
  • 2 tsp Southwestern seasoning
  • 1 cup cheddar cheese, nonfat, shredded

Instructions:

  1. Preheat the broiler.
  2. Cook the penne according to the package directions. Drain.
  3. Put everything but pasta and cheese in sauce pan. Cook until heated through, stirring occassionally to mix well.
  4. Place sauce and pasta in a 9″x13″-in. baking pan. Mix well and spread evenly. Sprinkle with the cheese.
  5. Broil until cheese is melted, approximately 5 minutes.

Cooking Suggestions
I will probably add sliced green or black olives next time.
