Ingredients:
- 3 large heads garlic
- 2 Tbs virgin olive oil
- 2 tsp virgin olive oil
- 8 chicken thighs, skinless
- 1 cup parsley, chopped
- Salt, to taste
- pepper, to taste
- nutmeg, to taste
Instructions:
- Preheat oven to 375°F .
- Separate the garlic into cloves.
- Peel garlic (easiest way is to put them in rapidly boiling water for about 30 seconds, then run cold water over them to cool. Cut the ends off and the skins slip off easily!)
- Pour olive oil into a 3 or 4 quart casserole dish with a tightly fitting lid.
- Add the garlic and toss to coat.
- Add the chicken, turn to coat.
- Sprinkle 1/2 the parsley over the chicken.
- Turn chicken and sprinkle the other half over the other side.
- Sprinkle with nutmeg, salt, and pepper to taste.
- Cover and bake for 1 hour.

This does not taste low-fat at all! It’s positively sinful!
