Sassy Salsa Rice

Servings: 8

Ingredients:

  • 2 cups white or brown rice, cooked
  • 1 cup Salsa
  • 1/2 cup sour cream, fat-free or lowfat
  • 4 oz cheddar cheese, lowfat or fat-free, shredded

Instructions:

  1. Layer the rice at the bottom of a small microwavable casserole dish.
  2. Spread a layer of the sour cream over the rice.
  3. Layer the salsa over the sour cream.
  4. Sprinkle the cheese over the salsa.
  5. Cook, covered, in microwave for 5 minutes or until cheese is melted.
