Ingredients:
- 2 cups white or brown rice, cooked
- 1 cup Salsa
- 1/2 cup sour cream, fat-free or lowfat
- 4 oz cheddar cheese, lowfat or fat-free, shredded
Instructions:
- Layer the rice at the bottom of a small microwavable casserole dish.
- Spread a layer of the sour cream over the rice.
- Layer the salsa over the sour cream.
- Sprinkle the cheese over the salsa.
- Cook, covered, in microwave for 5 minutes or until cheese is melted.
