Ingredients:
- 14 1/2 oz diced tomatoes
- 2 garlic cloves, minced
- 8 oz black olives, canned, sliced
- 2 Tbs tomato paste
- 2 Tbs red wine vinegar
- 1 Tbs capers, rinced and drained
- 1/2 tsp oregano
- 1/4 tsp pepper
Instructions:
- Combine all of the ingredients in a bowl; stir well.
- Pour into a sauce pan and simmer for 15 minutes.
Serving Suggestions
Serve this over grilled or baked chicken and couscous or mixed in with pasta.

The capers enhance the flavor of this sauce, if making it a bit salty.
