Pasta Rice Pilaf

Servings: 4

Ingredients:

  • 1 tbsp extra virgin olive oil
  • 1/3 cup whole wheat spaghetti, broken in 1″ bits
  • 3/4 cup brown rice
  • 2 cups vegetable broth

Instructions:

  1. Put oil in suace pan. Turn heat on to medium.
  2. Add pasta and rice; brown for 3 to 5 minutes, stirring regularly.
  3. Add broth; stir. Heat to boiling.
  4. Reduce heat and simmer 30 minutes or until liquid is absorbed.
  5. Fluff rice with fork.
