Serves 4.
Ingredients:
- 1 navel orange
- 1/2 tbsp extra-virgin olive oil
- 2 garlic cloves, minced
- 3 medium zucchini, sliced
- 1 tbsp red-wine vinegar
- 3 tbsp fresh mint, chopped
Instructions:
- Grate 1/4 tsp zest from the orange. Set aside.
- Peel and chop orange. Set aside.
- Add garlic and oil to a nonstick skillet and place over a medium heat; stir constantly until fragrant, about 30 seconds.
- Add zucchini and cook, sirring frequently, until softened, about 5 minutes.
- Stir in chopped orange, zest, and vinegar; cook until the liquid is slightly thickened but hasn’t evaporated, about 2 minutes.
- Remove from heat and stir in mint.
