Orange-Mint Zucchini

Serves 4.

Ingredients:

  • 1 navel orange
  • 1/2 tbsp extra-virgin olive oil
  • 2 garlic cloves, minced
  • 3 medium zucchini, sliced
  • 1 tbsp red-wine vinegar
  • 3 tbsp fresh mint, chopped

Instructions:

  1. Grate 1/4 tsp zest from the orange. Set aside.
  2. Peel and chop orange. Set aside.
  3. Add garlic and oil to a nonstick skillet and place over a medium heat; stir constantly until fragrant, about 30 seconds.
  4. Add zucchini and cook, sirring frequently, until softened, about 5 minutes.
  5. Stir in chopped orange, zest, and vinegar; cook until the liquid is slightly thickened but hasn’t evaporated, about 2 minutes.
  6. Remove from heat and stir in mint.

Why have I never cooked with fresh mint before? This is fabulous!!!!
