Mexican Meatloaf

Serves 8.

Ingredients:

  • cooking spray
  • 1 1/2 lbs 93% lean ground beef
  • 1 c. rolled oats
  • 1 medium onions, chopped
  • 1/2 tsp garlic powder
  • 4 oz canned diced green chili peppers, mild
  • 1 large egg
  • 1 tbsp chili powder
  • 2 tsp. ground cumin
  • 1 1/2 cups salsa, divided

Instructions:

  1. Preheat oven to 375°F. Coat loaf pan with cooking spray.
  2. Combine all ingredients, except 1 cup of salsa, together in a large mixing bowl.
  3. Spoon meat mixture into prepared pan and smooth top.
  4. Bake 60 minutes.
  5. Spoon remaining salsa over meatloaf and cook 5 minutes more.
  6. Slice into eight pieces.

Cook’s Notes
I used a mini-loaf pan that made four mini-loaves. I then cut each in half to portion out for freezing.
