Serves 8.
Ingredients:
- cooking spray
- 1 1/2 lbs 93% lean ground beef
- 1 c. rolled oats
- 1 medium onions, chopped
- 1/2 tsp garlic powder
- 4 oz canned diced green chili peppers, mild
- 1 large egg
- 1 tbsp chili powder
- 2 tsp. ground cumin
- 1 1/2 cups salsa, divided
Instructions:
- Preheat oven to 375°F. Coat loaf pan with cooking spray.
- Combine all ingredients, except 1 cup of salsa, together in a large mixing bowl.
- Spoon meat mixture into prepared pan and smooth top.
- Bake 60 minutes.
- Spoon remaining salsa over meatloaf and cook 5 minutes more.
- Slice into eight pieces.

I used a mini-loaf pan that made four mini-loaves. I then cut each in half to portion out for freezing.
