Servings: 4
Ingredients:
- 4 chicken breasts, skinless, boneless
- 1/2 cup ketchup
- 1 cup salsa
- 12 oz diet soda
Instructions:
- Layer chicken at the bottom of a crockpot.
- Pour the ketchup/salsa (or some combination of them) and soda over the chicken.
- Cook on low for about 8 hours.
Cook’s Tips
Add instant rice 30 minutes before you are going to serve and the rice will cook in and soak up the salsa sauce.
Don’t be afraid to experiment with different flavors of soda and different salsas. My current favorite is Diet Dr. Pepper and plain old mild salsa.
