Ingredients:
- 3 lbs sweet potatoes
- 1/2 cups brown sugar
- 3 tbs butter
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 tbs orange juice
- 1 tsp orange zest
- 2 medium granny smith apple
- 1/2 cups fresh cranberries
Instructions:
- Preheat oven to 375°F.
- Place potatoes in large pot; add enough water to cover potaotes.
- Bring to a boil; cover and cook 20 -30 minutes or just until fork-tender. Drain and cool.
- Peal potatoes and cut crosswise into 1-inch-thick slices. Cut large slices in half.
- Place potatoes in a square baker. Set aside.
- Place brown sugar, butter, cinnamon, salt, zest and juice into a microwavable bowl. Microwave on high for 1 minute or until well-blended; stir between minutes.
- Core and cut apples into wedges. Stir apples into brown sugar mixture. Microwave on high 3 minutes.
- Pour brown sugar and apple mixture over sweet potatoes.
- Bake 15 minutes. Sprinkle with cranberries. Baste potato mixtue. Continue baking another 15 – 20 minutes or until heated through.
- Baste before serving.
