Cran-Apple Sweet Potato Bake

Servings: 8

Ingredients:

  • 3 lbs sweet potatoes
  • 1/2 cups brown sugar
  • 3 tbs butter
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbs orange juice
  • 1 tsp orange zest
  • 2 medium granny smith apple
  • 1/2 cups fresh cranberries

Instructions:

  1. Preheat oven to 375°F.
  2. Place potatoes in large pot; add enough water to cover potaotes.
  3. Bring to a boil; cover and cook 20 -30 minutes or just until fork-tender. Drain and cool.
  4. Peal potatoes and cut crosswise into 1-inch-thick slices. Cut large slices in half.
  5. Place potatoes in a square baker. Set aside.
  6. Place brown sugar, butter, cinnamon, salt, zest and juice into a microwavable bowl. Microwave on high for 1 minute or until well-blended; stir between minutes.
  7. Core and cut apples into wedges. Stir apples into brown sugar mixture. Microwave on high 3 minutes.
  8. Pour brown sugar and apple mixture over sweet potatoes.
  9. Bake 15 minutes. Sprinkle with cranberries. Baste potato mixtue. Continue baking another 15 – 20 minutes or until heated through.
  10. Baste before serving.
