Chili Bean Salad

    ingredients

  • 1 lb Kidney beans, canned, rinsed and drained
  • 1/2 cup onions, finely chopped
  • 1/2 cup green pepper, finely chopped
  • 1/4 cup plain nonfat yogurt
  • 1 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/4 tsp dried oregano
  • salt, to taste

Instructions:

  1. In a large bowl, combine kidney beans, onions, and green pepper. Mix well.
  2. In a small bowl, combine yogurt and spices. Add to bean mixture, mixing until well blended.
  3. Chill several hours to blend flavors.
  4. Stir before serving.

Serving Suggestion
This is an excellent side dish for soup, sandwiches or burgers or serve on a bed of lettuce as a salad.
