Chicken with Spicy Yogurt Marinade

Servings: 6

Ingredients:

  • 1 c plain fat free yogurt
  • 2 tsp olive oil
  • 1 Tb fresh lemon juice
  • 2 tsp salt
  • 1 Tb chili powder
  • 3/4 tsp ground cumin
  • 3/4 tsp black pepper
  • 1/4 tsp cinnamon
  • 6 skinless boneless chicken breast halves

Instructions:

  1. Whisk together the yogurt, the olive oil, lemon juice, salt and spices, then add chicken and turn until coated well.
  2. Marinate at room temperature for 20 min.
  3. Spray pan with cooking spray and fry chicken until just cooked through.

    I used this to make kebobs, and it was a tremendous success. I bumped up the chili powder to 1 1/2T, though.

    The yogurt marinade made the chicken so insanely tender that I had to char it just a tiny bit so that I could tell when I was biting into it. Good stuff!
