Servings: 6
Ingredients:
- 1 c plain fat free yogurt
- 2 tsp olive oil
- 1 Tb fresh lemon juice
- 2 tsp salt
- 1 Tb chili powder
- 3/4 tsp ground cumin
- 3/4 tsp black pepper
- 1/4 tsp cinnamon
- 6 skinless boneless chicken breast halves
Instructions:
- Whisk together the yogurt, the olive oil, lemon juice, salt and spices, then add chicken and turn until coated well.
- Marinate at room temperature for 20 min.
- Spray pan with cooking spray and fry chicken until just cooked through.

I used this to make kebobs, and it was a tremendous success. I bumped up the chili powder to 1 1/2T, though.
The yogurt marinade made the chicken so insanely tender that I had to char it just a tiny bit so that I could tell when I was biting into it. Good stuff!
