Chicken Tortilla Casserole

Servings: 6

Ingredients:

  • 1 1/4 cups cream of mushroom soup, reduced-fat
  • 3/4 cup salsa
  • 3/4 cup sour cream, fat-free
  • 1 Tbs chili powder
  • 2 medium tomatoes, chopped
  • 3 cups chicken, cubed
  • 12 corn tortillas, cut into 1 inch strips
  • 1 cup cheddar cheese, lowfat, shredded
  • green onion, to taste

Instructions:

  1. Preheat oven to 350°F.
  2. Mix all ingredients except cheese together in a bowl.
  3. In a 2-Quart shallow baking dish, add mixture with cheese.
  4. Bake for 40 min.
