Caramel Apple Salad

Servings: 8

Ingredients:

  • 32oz nonfat plain yogurt
  • 1oz box of Sugar-free fat-free butterscotch instant pudding mix
  • 4 red apples, cored and diced
  • 1/2 cup applesauce.

Instructions:

  1. Mix yogurt and pudding mix in a large bowl. Blend well.
  2. Fold apples and applesauce into yogurt mixture.
  3. Refrigerate overnight.

Cook’s Notes
I recommend using small apples, any kind you like — I prefer Fuji apples due to their sweet crunchiness. This recipe easily makes more than 8 cups.

I used an apple wedger to cut down on the preparation time with the apples.
