Balsamic Mashed Sweet Potatoes

Serves 6.

Ingredients:

  • 3 lbs sweet potatoes
  • 2 tbsp balsamic vinegar
  • 1/2 tsp cinnamon
  • 1/4 c fat free sour cream

Instructions:

  1. Preheat oven to 425°F.
  2. Prick sweet potatoes with a fork in several places and bake on a baking sheet in the middle of the oven until very tender, approximately 1 1/4 hours.
  3. Remove from oven and cool until they can be handled.
  4. Remove and discard the skins.
  5. In a food processor or blender, blend potatoes, vinegar, and cinnamon until smooth.
  6. Transfer to a bowl and stir in the sour cream until well-combined.
