Serves 6.
Ingredients:
- 3 lbs sweet potatoes
- 2 tbsp balsamic vinegar
- 1/2 tsp cinnamon
- 1/4 c fat free sour cream
Instructions:
- Preheat oven to 425°F.
- Prick sweet potatoes with a fork in several places and bake on a baking sheet in the middle of the oven until very tender, approximately 1 1/4 hours.
- Remove from oven and cool until they can be handled.
- Remove and discard the skins.
- In a food processor or blender, blend potatoes, vinegar, and cinnamon until smooth.
- Transfer to a bowl and stir in the sour cream until well-combined.
