Almond Joy Pudding

Serves 8.

Ingredients:

  • 32oz fat-free plain yogurt, divided
  • 1 tsp coconut extract (or to taste)
  • 1 box sugar-free fat-free instant vanilla pudding mix
  • 1 box sugar-free fat-free instant chocolate fudge pudding mix

Instructions:

  1. Mix 16 oz of yogurt with the coconut extract and vanilla pudding mix until smooth and well-blended in a bowl.
  2. Mix remaining yogurt with chocolate fudge pudding mix until smooth and well-blended in another bowl.
  3. Place both bowls in the refridgerator for 5 to 10 minutes to set.
  4. Layer puddings in 8 dessert bowls.

    I add some Almond flavoring and a packet of instant oatmeal…the oatmeal gives you the consistency of coconut to the pudding and helps trick the mind!
